Chiang Rai is a more secluded, more "Thai" city than it's close neighbor Chiang Mai. You can spend a couple of days hiking through the mountains or motorbiking across them. There are many Thai shops to visit and it's an easy going atmosphere that will give you some peace of mind after time in the bigger cities.
